Sweet Bell Pepper Onion Dip
1 large onion
1 1/2 cups of soaked cashews (8 hrs or overnight)
5 cloves of garlic
3 tbsp of olive oil
1/4 of a green bell pepper diced
1/4 of a red bell pepper diced
1/4 of a yellow bell pepper diced
1/2 tsp of garlic granules
1 cup of almond coconut milk
1/2 tsp of fine sea salt
Heat the olive oil up in a large, good-quality non stick pan on medium heat. Add in the diced onions and cook to caramelize.
Cook until the onions are soften and golden brown.
Stir occasionally, and let cook about 25 minutes. You may need to reduce the heat as they cook.
Once your onions are caramelized, stir in the garlic and bell peppers. Reduce the heat if needed and cook an additional 15 minutes or so, until the everything has softened.
While onions and peppers are cooking, add your soaked cashews (should be about 2 cups now after soaking) to your blender and add the 1 cup of milk. Blend until very smooth.
Once onions and peppers are done cooking, add the blended cashews, salt and garlic granules. Stir to mix well. Turn off stove. .
Eat immediately with your favorite chip or bread! A thinly sliced plantain chip is my favorite!
